* 3 large ripe bananas, mashed
* 1/2 cup (100g) gluten-free all-purpose flour
* 1/4 cup (50g) cornstarch
* 1/4 cup (50g) granulated sugar
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1 large egg
* 1/2 cup (115ml) unsalted butter, melted
* 1 teaspoon vanilla extract
* Optional: chopped walnuts or pecans for added texture and flavor

Instructions:

1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan or 6 mini loaf pans and set aside.
2. In a large mixing bowl, whisk together the gluten-free flour, cornstarch, sugar, baking soda, salt, cinnamon, and nutmeg.
3. In a separate bowl, combine the mashed bananas, egg, and melted butter. Stir to combine.
4. Add the vanilla extract and mix well.
5. Add the dry ingredients to the wet ingredients and mix until a smooth batter forms.
6. If using nuts, fold them into the batter.
7. Pour the batter into the prepared loaf pan(s) and smooth the top.
8. Bake for 50-60 minutes for a 9×5-inch loaf or 30-35 minutes for 6 mini loaves. The bread is done when a toothpick inserted into the center comes out clean.
