Creamy Mushroom Chicken
Creamy Mushroom Chicken is a classic comfort food dish that’s perfect for a cozy night in. The tender chicken breasts are bathed in a rich, velvety mushroom sauce that’s both satisfying and indulgent. It’s a relatively simple dish to prepare, making it a great option for busy weeknights.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 12 ounces cremini mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup dry white wine (optional)
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish
Cooking Guide:
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until browned on both sides and cooked through. Remove from skillet and set aside.
- In the same skillet, sauté onions and mushrooms until softened. Add garlic and cook for 30 seconds more.
- Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth and white wine (if using), bringing to a simmer.
- Reduce heat to low and simmer for 5 minutes, or until sauce thickens slightly. Stir in heavy cream, butter, thyme, salt, and pepper.
- Return chicken to the skillet and coat with the mushroom sauce. Simmer for an additional 5 minutes, or until chicken is heated through and sauce is thickened to your desired consistency.
- Garnish with fresh parsley before serving.
Tips:
- For a richer flavor, use a combination of cremini and shiitake mushrooms.
- A splash of Worcestershire sauce can add depth to the sauce.
- Serve over rice, pasta, or mashed potatoes for a complete meal.
- If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with a little water.
- To make it a low-carb meal, serve with cauliflower rice or zucchini noodles.
