Creamy Mushroom Chicken

Creamy Mushroom Chicken is a classic comfort food dish that’s perfect for a cozy night in. The tender chicken breasts are bathed in a rich, velvety mushroom sauce that’s both satisfying and indulgent. It’s a relatively simple dish to prepare, making it a great option for busy weeknights.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 12 ounces cremini mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Cooking Guide:

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until browned on both sides and cooked through. Remove from skillet and set aside.
  2. In the same skillet, sauté onions and mushrooms until softened. Add garlic and cook for 30 seconds more.
  3. Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth and white wine (if using), bringing to a simmer.
  4. Reduce heat to low and simmer for 5 minutes, or until sauce thickens slightly. Stir in heavy cream, butter, thyme, salt, and pepper.
  5. Return chicken to the skillet and coat with the mushroom sauce. Simmer for an additional 5 minutes, or until chicken is heated through and sauce is thickened to your desired consistency.
  6. Garnish with fresh parsley before serving.

Tips:

  • For a richer flavor, use a combination of cremini and shiitake mushrooms.
  • A splash of Worcestershire sauce can add depth to the sauce.
  • Serve over rice, pasta, or mashed potatoes for a complete meal.
  • If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with a little water.
  • To make it a low-carb meal, serve with cauliflower rice or zucchini noodles.
