Ingredients:
* 2 large ripe bananas, mashed
* 1 1/2 cups (190g) all-purpose flour
* 1 tsp baking soda
* 1 tsp ground cinnamon
* 1/2 tsp ground nutmeg
* 1/4 tsp ground ginger
* 1/2 cup (110g) unsalted butter, softened
* 3/4 cup (170g) granulated sugar
* 2 large eggs
* 1/2 cup (120ml) plain yogurt
* 1/2 cup (120ml) whole milk
* 1 tsp vanilla extract
* 1/4 cup (30g) chopped walnuts (optional)
* Confectioners' sugar, for dusting (optional)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and ginger.
3. In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy, about 2 minutes.
4. Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract.
5. With the mixer on low speed, gradually add the flour mixture to the wet ingredients and mix until just combined.
6. Stir in the yogurt, milk, and walnuts (if using).
