Chili Lime Shrimp Sheet Pan

Easy Chili Lime Shrimp Sheet Pan

This recipe is a fuss-free way to prepare flavorful shrimp with minimal cleanup.

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 limes, cut into wedges (for serving)

Cooking Guide:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss shrimp with olive oil, chili powder, paprika, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  3. Add bell peppers and red onion to the bowl and toss to coat with the seasoning.
  4. Spread the shrimp and vegetables evenly on the prepared baking sheet.
  5. Bake for 10-12 minutes, or until shrimp are pink and opaque and vegetables are tender-crisp.
  6. Garnish with fresh cilantro and serve with lime wedges for squeezing.

Tips:

  • Marinate the shrimp: For extra flavor, marinate the shrimp in the olive oil and spices for 30 minutes before baking.
  • Don’t overcrowd the pan: This ensures even cooking and prevents the shrimp from steaming instead of searing.
  • Shrimp size: Adjust cooking time slightly depending on the size of your shrimp. Smaller shrimp will cook faster.
  • Veggie options: Feel free to add other vegetables to the sheet pan, such as broccoli florets, cherry tomatoes, or asparagus.
  • Spicy kick: Add a chopped jalapeno pepper to the marinade for a spicier version.
  • Serving suggestions: Serve this dish with rice, quinoa, or tortillas for a complete meal. You can also enjoy it over a bed of greens for a lighter option.
