Ingredients:

  • For the Chicken:
    • 1 pound boneless, skinless chicken breasts
    • 1/2 cup all-purpose flour
    • 2 large eggs, beaten
    • 1 cup Italian seasoned breadcrumbs
    • Salt and freshly ground black pepper, to taste
  • For the Ziti:
    • 1 pound ziti pasta
    • 1 jar (24 ounces) your favorite marinara sauce
    • 2 cups shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup chopped fresh parsley (optional)

Cooking Guide:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Prepare the Chicken: Thinly slice chicken breasts into cutlets. Season with salt and pepper. Dredge each cutlet in flour, then dip in beaten egg, and finally coat in breadcrumbs.
  3. Heat a large skillet with olive oil over medium heat. Cook chicken for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from the pan and set aside.
  4. Cook the Ziti: Cook ziti according to package directions in a large pot of salted boiling water. Drain and return to the pot.
  5. Assemble the Casserole: In a large bowl, combine cooked ziti, marinara sauce, and 1 cup of mozzarella cheese. Toss to coat. Spread half of the mixture into the prepared baking dish.
  6. Top with cooked chicken breasts and sprinkle with remaining mozzarella cheese and Parmesan cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving. Garnish with fresh parsley, if desired.

Tips:

  • For a quicker option, use pre-cooked shredded chicken or rotisserie chicken.
  • Feeling adventurous? Add a layer of ricotta cheese between the ziti and chicken for extra creamy goodness.
  • Don’t have marinara sauce? Use your favorite spaghetti sauce or even try a creamy Alfredo sauce for a different twist.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven until warmed through.
