Chicken Legs with Garlic and Dijon
This recipe is a flavorful and easy way to prepare chicken legs. The garlic and Dijon mustard create a tangy and aromatic sauce that coats the chicken beautifully.
Ingredients:
- 4 bone-in, skin-on chicken legs
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cooking Guide:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Pat the chicken legs dry with paper towels. In a small bowl, whisk together olive oil, garlic, Dijon mustard, lemon juice, thyme, salt, and pepper.
- Brush the chicken legs generously with the garlic Dijon sauce, making sure to coat them evenly on all sides.
- Place the chicken legs skin-side up on the prepared baking sheet.
- Bake for 35-40 minutes, or until the chicken juices run clear and the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.
- Broil the chicken for an additional 2-3 minutes, or until the skin is golden brown and crispy. Be careful not to burn the skin.
- Let the chicken rest for 5 minutes before serving.
Tips:
- For extra crispy skin, pat the chicken legs dry thoroughly before seasoning them. You can also sprinkle them with a little baking powder before baking.
- If you don’t have fresh thyme, you can substitute 1/2 teaspoon of dried thyme.
- For a thicker sauce, remove the chicken from the baking sheet after 30 minutes of baking. Spoon some of the pan drippings into a small saucepan and heat it over medium heat. Simmer for a few minutes until the sauce thickens slightly. Then, brush the sauce back over the chicken and continue baking for an additional 5-10 minutes.
- Serve the chicken legs with roasted vegetables, mashed potatoes, or rice.
