Classic Chicken Cobb Salad

Ingredients:

Salad:
- 8-10 cups romaine lettuce, chopped
- 1/2 red onion, thinly sliced
- 4 hard-boiled eggs, quartered
- 1 cup cherry tomatoes, halved
- 1 large avocado, sliced or cubed
- 1/2 cup crumbled blue cheese
- 8 slices thick-cut bacon, cooked and chopped
- 3 cups cooked chicken breast, shredded

- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced

Prepare the Salad Ingredients:
- Wash and chop the romaine lettuce.
- Thinly slice the red onion.
- Hard-boil the eggs, then peel and quarter them.
- Halve the cherry tomatoes.
- Slice or cube the avocado.
- Crumble the blue cheese.
- Cook the bacon until crisp, then chop it into bite-sized pieces.
- Shred the cooked chicken breast.

Assemble the Salad:
- Arrange the chopped romaine lettuce on a large platter or bowl.
- In separate rows or sections on top of the lettuce, add the red onion, hard-boiled eggs, cherry tomatoes, avocado, blue cheese, cooked bacon, and shredded chicken.

Dressing (Optional):
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
