Classic Chicken Cobb Salad

This refreshing salad bursts with flavor and texture, making it a perfect lunch or light dinner.

Ingredients:

  • Salad:

    • 8-10 cups romaine lettuce, chopped
    • 1/2 red onion, thinly sliced
    • 4 hard-boiled eggs, quartered
    • 1 cup cherry tomatoes, halved
    • 1 large avocado, sliced or cubed
    • 1/2 cup crumbled blue cheese
    • 8 slices thick-cut bacon, cooked and chopped
    • 3 cups cooked chicken breast, shredded
  • Dressing (Optional):

    • 1/4 cup olive oil
    • 2 tablespoons red wine vinegar
    • 1 tablespoon lemon juice
    • 1 tablespoon Dijon mustard
    • 1 clove garlic, minced
    • Salt and freshly ground black pepper, to taste

Cooking Guide:

  1. Prepare the Salad Ingredients:

    • Wash and chop the romaine lettuce.
    • Thinly slice the red onion.
    • Hard-boil the eggs, then peel and quarter them.
    • Halve the cherry tomatoes.
    • Slice or cube the avocado.
    • Crumble the blue cheese.
    • Cook the bacon until crisp, then chop it into bite-sized pieces.
    • Shred the cooked chicken breast.
  2. Assemble the Salad:

    • Arrange the chopped romaine lettuce on a large platter or bowl.
    • In separate rows or sections on top of the lettuce, add the red onion, hard-boiled eggs, cherry tomatoes, avocado, blue cheese, cooked bacon, and shredded chicken.
  3. Dressing (Optional):

    • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
    • Drizzle the dressing over the salad before serving, or serve it on the side for individual portions.

Tips:

  • For extra crispy bacon, bake it in the oven at 400°F (200°C) for 15-20 minutes, or until desired crispness.
