Bulgogi Beef Udon Stir-Fry

Ingredients:
- 8 oz udon noodles
- 12 oz thinly sliced beef (ribeye or sirloin)
- 1/2 onion, thinly sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 2 green onions, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sesame oil
- 1 teaspoon honey
- 1/2 teaspoon red pepper flakes (optional)

Instructions:
