Ingredients:
* 2 pounds beef stew meat
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 medium-sized potatoes, peeled and cubed
* 1 large carrot, peeled and sliced
* 1 large celery stalk, sliced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1/2 teaspoon dried rosemary
* 1 bay leaf
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons all-purpose flour
* 2 tablespoons butter
Instructions:
1. Press the "Saute" button on the Instant Pot and melt the butter. Add the chopped onion and sauté until softened, about 5 minutes.
2. Add the minced garlic and sauté for an additional minute, until fragrant.
3. Add the beef stew meat and cook until browned on all sides, about 5 minutes.
4. Add the potatoes, carrot, celery, beef broth, red wine (if using), tomato paste, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
5. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
7. Remove the bay leaf and stir in the flour to thicken the stew.
8. Serve hot, garnished with fresh parsley or thyme, if desired.
