Beef Stew Instant Pot Recipes Easy Simple

Servings: 4-6 people

Ingredients:

* 2 pounds beef stew meat (chuck or round)
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 2 carrots, peeled and chopped
* 2 potatoes, peeled and chopped
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 bay leaves

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
3. Add the chopped beef and cook until browned on all sides, about 5-7 minutes.
4. Add the chopped carrots and potatoes, beef broth, red wine (if using), thyme, salt, and pepper. Stir to combine.
5. Close the lid and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
6. When the cooking time is up, let the pressure release naturally for 10-15 minutes, then quick-release any remaining pressure.
7. Remove the bay leaves and serve hot, garnished with fresh parsley or thyme, if desired.
