Beef Oxtail Recipes Instant Pot Recipe
Ingredients:
* 2 pounds beef oxtail, cut into 2-inch pieces
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon ground cumin
* 1 teaspoon smoked paprika
* Salt and black pepper, to taste
* 2 carrots, peeled and chopped
* 2 celery stalks, chopped
* 2 potatoes, peeled and chopped
* Fresh parsley, chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the chopped onion and cook until softened, about 3-4 minutes.
2. Add the minced garlic and cook for an additional minute, until fragrant.
3. Add the beef oxtail pieces and cook until browned on all sides, about 5-6 minutes. Remove the browned oxtail from the pot and set aside.
4. Add the beef broth, red wine (if using), tomato paste, cumin, smoked paprika, salt, and black pepper to the pot. Stir to combine and bring to a boil.
5. Add the browned oxtail back to the pot and make sure it's fully submerged in the liquid. If necessary, add a little more beef broth or water to cover the oxtail.
6. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
7. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
8. Open the lid and add the chopped carrots, celery, and potatoes to the pot. Stir to combine and close the lid again.
9. Set the Instant Pot to "Saute" mode and simmer the stew for an additional 10-15 minutes, or until the vegetables are tender.
