Beef Heel Roast Recipes Instant Pot
Servings: 6-8
Ingredients:
* 2-3 pound beef heel roast
* 2 tablespoons olive oil
* 1 large onion, sliced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 carrots, peeled and sliced
* 2 potatoes, peeled and cubed
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Sear the beef heel roast on all sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set it aside.
3. Add the sliced onion to the pot and cook until it's softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
4. Add the beef broth, red wine (if using), thyme, salt, and pepper to the pot. Stir to combine.
5. Return the beef roast to the pot and make sure it's mostly submerged in the liquid.
6. Add the sliced carrots and cubed potatoes to the pot.
7. Close the lid of the Instant Pot and make sure the valve is set to "Sealing".
8. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
9. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
10. Remove the beef roast from the pot and slice it against the grain. Serve with the roasted vegetables and juices.
