Beef Chuck Roast Recipes Instant Pot Slow Cook

Servings: 6-8 people

Ingredients:

* 3-4 lbs beef chuck roast
* 2 tbsp olive oil
* 1 onion, sliced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tsp dried thyme
* 1 tsp dried rosemary
* 1 bay leaf
* Salt and pepper, to taste
* Optional: 1 cup frozen potatoes, 1 cup frozen carrots, or other vegetables of your choice

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Sear the beef chuck roast on both sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set it aside.
2. Add the sliced onion to the pot and cook until caramelized, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute.
3. Add the beef broth, red wine (if using), thyme, rosemary, and bay leaf to the pot. Stir to combine, scraping the bottom of the pot to release any browned bits.
4. Return the beef chuck roast to the pot and make sure it's covered with the liquid.
5. Close the lid and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 10-15 minutes, then quick-release any remaining pressure.
7. Remove the bay leaf and check the roast for tenderness. If it's not tender, close the lid and cook for an additional 30 minutes.
8. Remove the roast from the pot and let it rest for 10-15 minutes before slicing against the grain.
