Ingredients:
* 2-3 pound beef chuck blade roast
* 2 tablespoons olive oil
* 1 onion, sliced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* Salt and pepper, to taste
* 2 bay leaves (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Sear the beef chuck blade roast on both sides until browned, about 2-3 minutes per side. Remove from the Instant Pot and set aside.
3. Add the sliced onion to the Instant Pot and cook until caramelized, stirring occasionally, about 5 minutes.
4. Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.
5. Add the beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper. Stir to combine, scraping the bottom of the pot to release any browned bits.
6. Return the beef chuck blade roast to the Instant Pot and make sure it's mostly submerged in the liquid. If necessary, add a little more beef broth or water.
7. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 60-70 minutes at high pressure.
8. When the cooking time is up, allow the pressure to release naturally for 10-15 minutes, then quick-release any remaining pressure.
9. Remove the beef chuck blade roast from the Instant Pot and slice it against the grain. Strain the sauce and discard the bay leaves (if using). Serve the roast with the savory sauce spooned over the top.
CookTime: 60-70 minutes ( Instant Pot pressure cooking time)
PrepTime: 20 minutes (including browning the roast and cooking the onion)
Total Time: 80-90 minutes
Variations:
* For a richer sauce, reduce the beef broth to 1/2 cup and add 1/4 cup red wine.
* For a spicy kick, add 1-2 teaspoons of dried chili flakes to the sauce.
* For a Mediterranean twist, add 1/4 cup chopped fresh oregano and 2 cloves minced fresh garlic to the sauce.
* For a more intense flavor, brown the roast for an additional 5 minutes on each side or use a different cut of beef, such as chuck roast or brisket.
