Beef and Cauliflower Stovetop Casserole

This hearty casserole is a one-pan wonder, perfect for a busy weeknight. Ground beef and cauliflower florets are cooked together in a flavorful tomato sauce, then topped with melty cheese for a satisfying and comforting meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes with their juices
  • 4 cups cauliflower florets, cut into bite-sized pieces
  • 2 tablespoons smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (optional)

Cooking Guide:

  1. Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in the garlic, diced tomatoes, smoked paprika, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Add the cauliflower florets and stir to coat with the sauce. Cover the skillet and simmer for 10-12 minutes, or until the cauliflower is tender-crisp.
  5. Remove the skillet from the heat and preheat your broiler to high.
  6. Sprinkle the shredded cheese over the top of the casserole. Broil for 2-3 minutes, or until the cheese is melted and bubbly.

Tips:

  • For a richer flavor, use ground beef with a higher fat content (around 80/20).
  • If you don’t have fresh bell pepper, you can use 1/2 teaspoon dried bell pepper flakes instead.
  • To make this recipe low-carb, use riced cauliflower instead of the florets. Add the riced cauliflower in step 4 and cook for just a few minutes, until heated through.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave until warmed through.
