Beef Barley Stew Instant Pot Recipe
Servings: 4-6
Ingredients:
* 2 pounds beef stew meat (such as chuck or round)
* 2 tablespoons olive oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 medium carrots, peeled and chopped
* 2 medium potatoes, peeled and chopped
* 1 cup pearl barley
* 4 cups beef broth
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* Salt and pepper, to taste
* Optional: 1 cup frozen peas and carrots
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Add the minced garlic and cook for an additional 1 minute.
4. Add the beef stew meat and cook until browned on all sides, about 5 minutes.
5. Add the chopped carrots and potatoes, pearl barley, beef broth, thyme, rosemary, salt, and pepper. Stir to combine.
6. Close the lid of the Instant Pot and make sure the valve is set to "Sealing".
7. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
8. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
9. Open the lid and check for any remaining liquid. If necessary, simmer the stew on "Saute" mode for an additional 5-10 minutes to reduce the liquid.
