Recipe: Banana Bread Yogurt Loaf

Ingredients:

* 3 large ripe bananas, mashed
* 1 1/2 cups all-purpose flour
* 1 cup granulated sugar
* 1/2 cup plain whole milk yogurt
* 1/4 cup unsalted butter, melted
* 2 large eggs
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon vanilla extract
* 1/2 cup chopped walnuts or pecans (optional)

Instructions:

1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set aside.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk together the mashed bananas, yogurt, melted butter, eggs, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
5. Fold in the chopped nuts, if using.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
8. Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
