Banana Bread with Coconut Recipe
Ingredients:
* 3 large ripe bananas, mashed
* 1 1/2 cups all-purpose flour
* 1/2 cup granulated sugar
* 1/2 cup unsweetened shredded coconut
* 1/2 cup unsalted butter, melted
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1/4 cup chopped walnuts (optional)
* 1/4 cup dark chocolate chips (optional)
* Confectioners' sugar, for dusting (optional)
Instructions:
1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set aside.
2. In a large mixing bowl, whisk together the flour, sugar, and unsweetened shredded coconut.
3. In a separate mixing bowl, whisk together the melted butter, eggs, and vanilla extract.
4. Add the mashed bananas to the wet ingredients and whisk until smooth.
5. Add the dry ingredients to the wet ingredients and stir until just combined.
6. Fold in the chopped walnuts and dark chocolate chips, if using.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 55-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
9. Remove the bread from the oven and let it cool in the pan for 10 minutes.
