Variations:
* To make a Chocolate Chip version, add 1/2 cup semi-sweet chocolate chips to the batter before pouring it into the loaf pan.
* To make a Pecan Praline version, substitute chopped pecans for the almonds and add 1/4 cup light brown sugar to the almond topping mixture.
* To make a Cinnamon Swirl version, mix 1 tsp ground cinnamon into the batter and sprinkle a pinch of cinnamon on top of the almond topping before baking.
* To make a Lemon Zest version, add the grated zest of 1 lemon to the batter and sprinkle a pinch of lemon zest on top of the almond topping before baking.
Tips:
* Use very ripe bananas for the best flavor.
* Don't overmix the batter, as it can result in a dense bread.
* If using fresh mint leaves, be sure to chop them finely to avoid overpowering the other flavors.
* This bread is best served warm, but it can be stored at room temperature for up to 3 days or frozen for up to 2 months.
