Air Fryer Pot Roast with Sweet Potatoes
This recipe uses the air fryer to create a tender pot roast and crispy sweet potatoes in a single appliance.
Ingredients:

For the Pot Roast:
- 2-2.5 lb beef chuck roast
- 1 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and freshly ground black pepper to taste
- 1 cup beef broth

- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp avocado oil
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste

Prepare the Pot Roast: Pat the beef chuck roast dry with paper towels. In a small bowl, whisk together olive oil, Worcestershire sauce, thyme, garlic powder, onion powder, salt, and pepper. Season the roast generously with the mixture on all sides.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for 5 minutes.

Cook the Pot Roast: Place the seasoned roast in the air fryer basket. Pour the beef broth around the roast, but not directly on top. Cook for 60 minutes, flipping the roast halfway through.

Prepare the Sweet Potatoes: While the roast cooks for the final 20 minutes, toss the cubed sweet potatoes with avocado oil, paprika, cayenne pepper (if using), garlic powder, salt, and pepper.

Cook the Sweet Potatoes: Carefully remove the air fryer basket with the roast and add the sweet potatoes in a single layer around the roast. Be sure not to overcrowd the basket. Cook for an additional 20 minutes, shaking the basket occasionally, until the roast is tender and the sweet potatoes are golden brown and cooked through.

Rest and Serve: Once cooked, transfer the roast to a cutting board and tent with foil to let it rest for 10 minutes. Slice the roast against the grain and serve with the roasted sweet potatoes. Garnish with chopped fresh parsley or cilantro, if desired.
Tips:
- Use a meat thermometer to ensure the internal temperature of the pot roast reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium-done.
- Cut the sweet potatoes into similar-sized cubes for even cooking.
- If your air fryer is small, you may need to cook the sweet potatoes in batches.
- For a thicker gravy, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. After removing the roast and sweet potatoes, whisk the slurry into the remaining beef broth in the air fryer basket. Cook for 1-2 minutes, stirring constantly, until the gravy thickens.
