Air Fryer Chicken Fajitas

These fajitas are a breeze to make in your air fryer, perfect for a quick and flavorful weeknight meal.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 yellow bell pepper (optional), sliced into thin strips
  • 1 large onion, sliced into wedges
  • 2 tablespoons olive oil
  • 2 teaspoons fajita seasoning
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • For serving:
  • Flour tortillas, warmed
  • Your favorite fajita toppings (shredded cheese, salsa, guacamole, sour cream, lime wedges)

Cooking Guide:

  1. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  2. In a large bowl, toss the chicken strips with olive oil, fajita seasoning, smoked paprika (if using), salt, and pepper.
  3. Add the bell peppers and onion wedges to the bowl and toss to coat with the seasoned chicken.
  4. Arrange the chicken and vegetables in a single layer in the air fryer basket, avoiding overcrowding. You may need to cook in batches depending on the size of your air fryer.
  5. Cook for 12-15 minutes, shaking the basket halfway through, or until the chicken is cooked through and the vegetables are tender-crisp.
  6. While the fajita filling cooks, warm your tortillas according to package instructions.

Tips:

  • Chicken prep: For thicker, more juicy chicken, you can briefly marinate the chicken strips in a mixture of olive oil, lime juice, and your favorite fajita seasoning before cooking.
  • Don’t overcrowd: This is important for even cooking and crispness. If your air fryer is small, cook the fajitas in batches.
  • Cooking time: Cooking time may vary depending on the thickness of your chicken strips and the model of your air fryer. Keep an eye on the chicken and vegetables towards the end of cooking to avoid overcooking.
  • Fajita variations: Feel free to add other vegetables to your fajitas, such as sliced poblano peppers, zucchini, or mushrooms. You can also use a pre-made fajita seasoning mix or create your own with chili powder, cumin, coriander, garlic powder, and onion powder.
  • Serving suggestions: Serve your air fryer chicken fajitas immediately with warmed tortillas and your favorite fajita toppings.
