Easy Jumbo Stuffed Shrimp
This recipe creates delicious and impressive jumbo stuffed shrimp that are perfect for a celebratory meal or a delightful weeknight dinner.
Ingredients:
- 1 pound jumbo shrimp (16-20 per pound), peeled and deveined with tails on
- ½ cup mayonnaise
- 1 cup panko breadcrumbs
- 2 scallions, thinly sliced
- 1 tablespoon chopped fresh parsley
- 1 tablespoon grated Parmesan cheese
- 1 clove garlic, minced
- ½ teaspoon dried thyme
- ¼ teaspoon paprika
- 1/8 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper, to taste
- Olive oil
Cooking Guide:
- Prepare the Shrimp: In a small bowl, combine mayonnaise, panko breadcrumbs, scallions, parsley, Parmesan cheese, garlic, thyme, paprika, and cayenne pepper (if using). Season with salt and pepper to taste.
- Butterfly the Shrimp: Using a sharp knife, carefully make a shallow incision along the back of each shrimp, starting from the head end and stopping just before the tail. Gently spread the shrimp open, creating a pocket for the stuffing.
- Stuff and Bake: Preheat oven to 400°F (200°C). Lightly drizzle a baking dish with olive oil. Place the shrimp in a single layer in the baking dish. Divide the stuffing mixture evenly among the shrimp, spooning it into the pockets.
- Bake for 10-12 minutes, or until the shrimp are cooked through and opaque, and the stuffing is golden brown.
- Serve: Garnish with additional chopped parsley, if desired. Serve immediately with your favorite dipping sauce, such as lemon butter sauce, cocktail sauce, or marinara sauce.
Tips:
- Fresh is Best: Use the freshest shrimp possible for the best flavor and texture. Look for shrimp that are firm and have a translucent appearance.
- Control the Spice: Adjust the amount of cayenne pepper to your desired level of spiciness.
- Leftovers: Store leftover stuffed shrimp in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave until warmed through.
- Get Creative with Fillings: This recipe is a great base, feel free to experiment with different fillings! Try crab meat, chopped cooked lobster, or a mixture of vegetables and cheese.
