Creamy White Chicken Chili
This recipe is for a delicious and comforting white chicken chili. It’s packed with flavor and can be easily customized to your liking.
Ingredients:
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 jalapeño pepper, seeded and finely chopped (optional, for more spice leave some seeds)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 5 cups low-sodium chicken broth
- 2 (15.5 ounce) cans cannellini beans, rinsed and drained
- 1 (4 ounce) can chopped green chiles
- 1 cup heavy cream (or milk for a lighter option)
- 1/2 cup sour cream
- 1 tablespoon chopped fresh cilantro (optional)
- Salt and freshly ground black pepper to taste
Cooking Guide:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and jalapeño (if using) and cook, stirring occasionally, until softened, about 5-8 minutes.
- Add garlic, oregano, and cumin and cook for another minute, until fragrant.
- Stir in chicken pieces and cook until lightly browned on all sides.
- Pour in chicken broth, cannellini beans, and green chiles. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove pot from heat and stir in heavy cream (or milk) and sour cream. Season with salt and pepper to taste.
- Let chili sit for a few minutes to thicken slightly. Garnish with chopped fresh cilantro (if using) and serve hot.
Tips:
- For a thicker chili, mash some of the cannellini beans before adding them to the pot.
- This chili is even tastier the next day! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To make this recipe in a slow cooker, combine all ingredients except for the heavy cream (or milk) and sour cream in the slow cooker. Cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken is cooked through. Stir in heavy cream (or milk) and sour cream and heat through before serving.
- Want to add some spice? You can add a diced chipotle pepper in adobo sauce with the green chiles, or sprinkle some cayenne pepper on top of each bowl when serving.
- This chili is also delicious served with your favorite toppings, such as shredded cheese, avocado slices, chopped green onions, or tortilla chips.
