White Chicken Chili

Creamy White Chicken Chili

This recipe is for a delicious and comforting white chicken chili. It’s packed with flavor and can be easily customized to your liking.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 jalapeño pepper, seeded and finely chopped (optional, for more spice leave some seeds)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 5 cups low-sodium chicken broth
  • 2 (15.5 ounce) cans cannellini beans, rinsed and drained
  • 1 (4 ounce) can chopped green chiles
  • 1 cup heavy cream (or milk for a lighter option)
  • 1/2 cup sour cream
  • 1 tablespoon chopped fresh cilantro (optional)
  • Salt and freshly ground black pepper to taste

Cooking Guide:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and jalapeño (if using) and cook, stirring occasionally, until softened, about 5-8 minutes.
  2. Add garlic, oregano, and cumin and cook for another minute, until fragrant.
  3. Stir in chicken pieces and cook until lightly browned on all sides.
  4. Pour in chicken broth, cannellini beans, and green chiles. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  5. Remove pot from heat and stir in heavy cream (or milk) and sour cream. Season with salt and pepper to taste.
  6. Let chili sit for a few minutes to thicken slightly. Garnish with chopped fresh cilantro (if using) and serve hot.

Tips:

  • For a thicker chili, mash some of the cannellini beans before adding them to the pot.
  • This chili is even tastier the next day! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To make this recipe in a slow cooker, combine all ingredients except for the heavy cream (or milk) and sour cream in the slow cooker. Cook on low for 6-8 hours, or on high for 3-4 hours, or until chicken is cooked through. Stir in heavy cream (or milk) and sour cream and heat through before serving.
  • Want to add some spice? You can add a diced chipotle pepper in adobo sauce with the green chiles, or sprinkle some cayenne pepper on top of each bowl when serving.
  • This chili is also delicious served with your favorite toppings, such as shredded cheese, avocado slices, chopped green onions, or tortilla chips.
