Ingredients:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs (cubed)
  • 2 tablespoons olive oil

  • 1 large onion, diced
  • 8 cups chicken broth

  • 4 cups chopped vegetables of your choice (broccoli florets, green beans, corn, peas, etc.)

Cooking Guide:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until golden brown on all sides, about 5-7 minutes. Remove from the pot and set aside.
  2. Add the garlic, carrots, celery, and bell peppers to the pot. Sauté for 5-7 minutes, or until the vegetables begin to soften.
  3. Stir in the chicken broth, diced tomatoes, thyme, and oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.
