This easy crockpot recipe creates a flavorful and comforting chicken and lime soup, perfect for a weeknight meal. The lime adds a bright and fresh touch, while the chicken and vegetables provide a satisfying heartiness.

Ingredients:

  • 1 pound boneless, skinless chicken breasts or thighs (or 3-4 cups shredded cooked chicken)
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced (optional, for more spice)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Optional toppings: Chopped avocado, crumbled queso fresco, tortilla strips, lime wedges

Cooking Guide:

  1. Place the chicken breasts or thighs in the bottom of your crockpot.
  2. Add the diced onion, garlic, jalapeno (if using), diced tomatoes with their juices, cilantro, lime juice, chili powder, cumin, and salt and pepper.
  3. Pour in the chicken broth.
  4. Stir the ingredients to combine everything.
  5. Cover the crockpot and cook on LOW for 6-8 hours, or on HIGH for 4-6 hours, or until the chicken is cooked through and shreds easily with a fork.
  6. Once cooked, remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the crockpot.
  7. Taste the soup and adjust seasonings with additional salt, pepper, or lime juice as needed.

Tips:

  • For a thicker soup: Once the chicken is cooked and shredded, remove about 1/2 cup of the cooked soup to a bowl. Mash the vegetables in the bowl with a fork to create a slurry. Then, return the slurry to the crockpot and stir to thicken the soup slightly.
  • Adding Vegetables: Feel free to add your favorite vegetables to the crockpot with the other ingredients. Diced carrots, celery, corn, or black beans would all be delicious additions.
  • Spice Level: This recipe is mildly spiced. If you prefer a spicier soup, you can leave the seeds in the jalapeno or add a pinch of cayenne pepper.
  • Storage: Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days.
