
Breakfast Burritos with Sausage Recipe
This recipe makes 4-6 breakfast burritos, depending on size.
Ingredients
- 1 pound sausage, casings removed
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 6 eggs
- 6 tortillas (flour or corn)
- 1 cup shredded cheese (Cheddar or Monterey Jack work well)
- 1 can (4.5 oz) diced green chilies
- Salt and pepper to taste
- Optional fillings: diced bell peppers, diced tomatoes, sour cream, salsa
Instructions
- Cook the sausage in a large skillet over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes.
- Remove the cooked sausage from the skillet and set aside. Leave the drippings in the skillet.
- Add the diced onion to the skillet and cook until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional minute.
- In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the onion and garlic in the skillet. Scramble the eggs until cooked through, about 2-3 minutes.
- Add the cooked sausage back into the skillet with the eggs and stir to combine.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the burritos by spooning the sausage and egg mixture onto a tortilla, followed by a sprinkle of cheese, a spoonful of diced green chilies, and any desired optional fillings.
- Roll the burrito up tightly and repeat with the remaining ingredients.
Tips
For an extra-fluffy burrito, add a sprinkle of cheese to the tortilla before adding the sausage and egg mixture.
