Ground Beef And Rice Instant Pot Recipe

Ingredients:

* 1 pound ground beef
* 1 medium onion, diced
* 2 cloves garlic, minced
* 1 cup uncooked white rice
* 2 cups beef broth
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1 teaspoon paprika
* Salt and pepper, to taste
* 2 tablespoons olive oil
* Fresh parsley, chopped (optional)

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the diced onion and cook until softened, about 3-4 minutes.
2. Add the minced garlic and cook for an additional minute, until fragrant.
3. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-6 minutes.
4. Add the diced tomatoes, beef broth, rice, thyme, paprika, salt, and pepper. Stir to combine.
5. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Manual" or "Pressure Cook" button and set the cooking time to 10 minutes at high pressure.
6. When the cooking time is up, allow the pressure to release naturally for 5 minutes, then quick-release any remaining pressure.
7. Open the lid and fluff the rice and ground beef mixture with a fork. Taste and adjust seasoning as needed.
