Easy Turkey Burger Soup
This recipe is a hearty and flavorful soup that’s perfect for a quick and easy weeknight meal. It’s loaded with ground turkey, vegetables, and all the classic cheeseburger flavors you love.
Ingredients:
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped potatoes
- 1 cup frozen corn
- 1 cup shredded cheddar cheese (optional)
Cooking Guide:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey, onion, and garlic. Cook, stirring occasionally, until the turkey is browned and the vegetables are softened, about 5-7 minutes.
- Add the chicken broth, diced tomatoes, tomato paste, oregano, parsley, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low and simmer for 10 minutes.
- Add the carrots, celery, and potatoes. Simmer for an additional 10-15 minutes, or until the vegetables are tender.
- Stir in the frozen corn and simmer for another 2-3 minutes, or until heated through.
- If desired, stir in the shredded cheddar cheese until melted.
