Instant Pot Recipes Beef Bourguignon
Servings: 4-6 people
Ingredients:
* 2 pounds beef chuck or short ribs, cut into 2-inch pieces
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 medium carrots, peeled and chopped
* 2 stalks celery, chopped
* 1 cup mushrooms, sliced
* 1 cup all-purpose flour
* 1 teaspoon paprika
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 cups red wine (such as Cabernet Sauvignon or Merlot)
* 2 cups beef broth
* 1 tablespoon tomato paste
* 2 tablespoons butter
Optional ingredients to make other versions:
* Red bell pepper, chopped (adds sweetness)
* Tomatoes, canned or fresh (adds acidity)
* Bacon, diced (adds smokiness)
* Pearl onions, peeled (adds a pop of flavor)
* Fresh parsley, chopped (adds freshness)
Instructions:
1. Press the "Saute" button on the Instant Pot and melt the butter. Add the chopped onion, garlic, carrots, and celery and cook until they're tender, about 5 minutes.
2. Add the mushrooms and cook until they're softened, about 3 minutes.
3. Add the flour and cook for 1 minute, stirring constantly.
4. Add the paprika, thyme, salt, and pepper, and stir to combine.
5. Add the beef pieces and cook until they're browned on all sides, about 5 minutes.
6. Add the red wine, beef broth, and tomato paste. Stir to combine, scraping up any browned bits from the bottom of the pot.
7. Close the lid and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
8. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
9. Open the lid and check that the beef is tender and the sauce has thickened. If it's not tender, close the lid and cook for an additional 10 minutes.
10. Serve the beef and sauce over egg noodles, mashed potatoes, or crusty bread.
Cook Time: 30 minutes
Prep Time: 20 minutes
Total Time: 50 minutes
