Instant Pot Stew Beef Recipes

Servings: 4-6

Ingredients:

* 2 pounds beef stew meat (such as chuck or round)
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1/2 teaspoon paprika
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 carrots, peeled and chopped
* 2 potatoes, peeled and chopped
* 2 celery stalks, chopped

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the chopped onion and cook until it's translucent, about 5 minutes.
2. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
3. Add the beef stew meat and cook until it's browned on all sides, about 5-7 minutes.
4. Add the beef broth, red wine (if using), tomato paste, thyme, paprika, salt, and pepper. Stir to combine.
5. Add the chopped carrots, potatoes, and celery. Stir to combine.
6. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
7. When the cooking time is up, allow the pressure to naturally release for 10 minutes, then quick-release any remaining pressure.
8. Open the lid and check the beef for tenderness. If it needs more cooking time, close the lid and cook for an additional 30 minutes.
