Instant Pot Recipes Beef Chuck Roast
Servings: 4-6 people
Ingredients:
* 2-3 pound beef chuck roast
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 bay leaves
* 2 carrots, peeled and chopped (optional)
* 2 potatoes, peeled and chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Sear the beef chuck roast on both sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set it aside.
3. Add the chopped onion to the pot and cook until it's translucent, about 3-4 minutes.
4. Add the minced garlic and cook for an additional minute, until fragrant.
5. Add the beef broth, red wine (if using), tomato paste, thyme, salt, and pepper. Stir to combine.
6. Add the browned beef roast back to the pot, making sure it's mostly submerged in the liquid.
7. Add the bay leaves, carrots, and potatoes (if using) to the pot.
8. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
9. When the cooking time is up, allow the pressure to naturally release for 10 minutes, then quick-release any remaining pressure.
10. Remove the pot from the Instant Pot and let the roast rest for 10-15 minutes before slicing and serving.
CookTime: 90 minutes
PrepTime: 20 minutes
Total Time: 1 hour 50 minutes
Variations:
* For a more intense flavor, use beef stock instead of beef broth.
* Add a can of diced tomatoes for added acidity and flavor.
* Replace the thyme with rosemary or oregano for a different herbal flavor.
* Use beef Short Ribs or Chuck Flank instead of Chuck Roast for a different cut of meat.
* Add some sautéed mushrooms or bell peppers to the pot for added flavor and texture.
