Lemon Garlic Baked Cod
This recipe is a simple and flavorful way to prepare cod. The lemon and garlic add a brightness that perfectly complements the mild taste of the fish.
Ingredients:
- 4 cod fillets (around 6 ounces each)
- 1 tablespoon olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Cooking Guide:
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Pat the cod fillets dry with paper towels. Season them with salt and pepper.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Place the cod fillets in the prepared baking dish. Pour the lemon garlic sauce over the cod, making sure to coat them evenly.
- Bake the cod for 10-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Tips:
- For a richer flavor, use melted butter instead of olive oil in the sauce.
- Add a pinch of red pepper flakes to the sauce for a bit of heat.
- If you don’t have fresh oregano, you can substitute it with 1/4 teaspoon of dried thyme.
- Don’t overcook the cod, or it will become dry and tough.
- Serve the cod with roasted vegetables, rice, or quinoa.
- You can also add other vegetables to the baking dish, such as cherry tomatoes, sliced zucchini, or chopped asparagus.
