Lemon Garlic Baked Cod

This recipe is a simple and flavorful way to prepare cod. The lemon and garlic add a brightness that perfectly complements the mild taste of the fish.

Ingredients:

  • 4 cod fillets (around 6 ounces each)
  • 1 tablespoon olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Cooking Guide:

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the cod fillets dry with paper towels. Season them with salt and pepper.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Place the cod fillets in the prepared baking dish. Pour the lemon garlic sauce over the cod, making sure to coat them evenly.
  5. Bake the cod for 10-15 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Tips:

  • For a richer flavor, use melted butter instead of olive oil in the sauce.
  • Add a pinch of red pepper flakes to the sauce for a bit of heat.
  • If you don’t have fresh oregano, you can substitute it with 1/4 teaspoon of dried thyme.
  • Don’t overcook the cod, or it will become dry and tough.
  • Serve the cod with roasted vegetables, rice, or quinoa.
  • You can also add other vegetables to the baking dish, such as cherry tomatoes, sliced zucchini, or chopped asparagus.
