Healthy Instant Pot Recipes Beef Stew Recipe

Servings: 4-6

Ingredients:

* 2 pounds beef stew meat (such as chuck or round)
* 1 large onion, chopped
* 3 cloves of garlic, minced
* 2 medium-sized carrots, peeled and chopped
* 2 medium-sized potatoes, peeled and chopped
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons olive oil

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for an additional minute, until fragrant.
3. Add the beef stew meat and cook until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.
4. Add the chopped carrots and potatoes to the pot and cook for 2-3 minutes, until they start to soften.
5. Add the beef broth, red wine (if using), thyme, salt, and pepper to the pot. Stir to combine.
6. Return the browned beef to the pot and make sure it's covered with the liquid.
7. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
8. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
9. Open the lid and check the stew for tenderness. If the beef is not tender, close the lid and cook for an additional 10-15 minutes.
