Instant Pot Beef Soup Recipe

Servings: 6-8

Ingredients:

* 2 pounds beef stew meat (such as chuck or round)
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 medium carrots, peeled and chopped
* 2 medium potatoes, peeled and chopped
* 1 large celery stalk, chopped
* 2 cups beef broth
* 1 cup water
* 1 teaspoon dried thyme
* 1/2 teaspoon dried rosemary
* 1 bay leaf
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 2 tablespoons tomato paste (optional)

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the pot until it reads "HOT".
2. Add the chopped onion and cook until it's translucent, about 5 minutes.
3. Add the minced garlic and cook for an additional minute.
4. Add the beef stew meat and cook until it's browned on all sides, about 5 minutes.
5. Add the chopped carrots, potatoes, and celery, and cook for 1-2 minutes.
6. Add the beef broth, water, thyme, rosemary, bay leaf, salt, and pepper. Stir well to combine.
7. Close the lid of the Instant Pot and set the valve to "SEALING".
8. Press the "Manual" or "Pressure Cook" button and set the cooking time to 30 minutes at high pressure.
9. When the cooking time is up, allow the pressure to release naturally for 10-15 minutes, then quick-release any remaining pressure.
10. Remove the bay leaf and use two forks to shred the beef into bite-sized pieces.
11. Serve hot, garnished with chopped fresh herbs or a sprinkle of paprika, if desired.
