Beef Knuckle Recipes Instant Pot
Servings: 4-6 people
Ingredients:
* 2 pounds beef knuckle (also known as beef shank or beef short ribs), cut into 2-inch pieces
* 2 tablespoons vegetable oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 bay leaf
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 2 tablespoons tomato paste
* 2 carrots, peeled and chopped
* 2 potatoes, peeled and chopped
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the oil until it reads "HOT".
2. Add the chopped onion and cook until it's translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, until fragrant.
4. Add the beef knuckle pieces and cook until browned on all sides, about 5 minutes.
5. Add the beef broth, red wine (if using), thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
6. Add the tomato paste and stir to combine.
7. Close the lid of the Instant Pot and make sure the valve is set to "SEALING".
8. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 90 minutes at high pressure.
9. Let the pressure release naturally for 10-15 minutes after cooking, then quick-release any remaining pressure.
10. Open the lid and add the chopped carrots and potatoes. Stir to combine.
11. Close the lid again and set the cooking time to 10-15 minutes at high pressure.
12. Let the pressure release naturally for 5-10 minutes after cooking, then quick-release any remaining pressure.
13. Serve the beef knuckle hot, garnished with fresh parsley or thyme if desired.
