Instant Pot Recipes Beef Mexican Recipe

Ingredients:

* 2 pounds beef brisket or chuck, sliced into thin strips
* 1 tablespoon olive oil
* 1 medium onion, diced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup chopped fresh tomatoes (or 1 can diced tomatoes)
* 1 tablespoon chili powder
* 1 teaspoon ground cumin
* 1 teaspoon paprika
* 1/2 teaspoon cayenne pepper (optional)
* Salt and pepper, to taste
* 8-10 corn tortillas, cut into quarters
* Shredded cheese, diced tomatoes, sliced avocado, sour cream, and cilantro for toppings (optional)

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.
2. Add the diced onion to the pot and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, until fragrant.
4. Add the beef broth, chopped tomatoes, chili powder, cumin, paprika, and cayenne pepper (if using) to the pot. Stir to combine.
5. Return the browned beef to the pot and stir to coat with the sauce.
6. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
7. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
8. Open the lid and stir the mixture to ensure the beef is tender and the sauce has thickened.
9. Warm the tortilla quarters by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
