Recipe: Mexican Shredded Beef Instant Pot
Servings: 6-8
Ingredients:
* 2 pounds beef brisket or beef shank, cut into 2-inch pieces
* 1 large onion, sliced
* 3 cloves garlic, minced
* 1 tablespoon ground cumin
* 1 teaspoon chili powder
* 1 teaspoon paprika
* 1/2 teaspoon cayenne pepper (optional)
* 1 can (14.5 oz) diced tomatoes, undrained
* 1 cup beef broth
* 1 tablespoon tomato paste
* 1 teaspoon dried oregano
* Salt and pepper, to taste
* 2 cups shredded cheese (Monterey Jack, Cheddar, or a blend)
* 1/4 cup chopped fresh cilantro (optional)
* 6-8 corn tortillas
* Sliced radishes, lime wedges, and sour cream (for garnish)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the pot until it reads "HOT".
2. Add the sliced onion and cook until softened, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
4. Add the cut beef to the pot and cook until browned on all sides, about 5-6 minutes.
5. Stir in the cumin, chili powder, paprika, and cayenne pepper (if using). Cook for 1 minute.
6. Add the diced tomatoes, beef broth, tomato paste, and dried oregano. Stir to combine.
7. Close the lid of the Instant Pot and make sure the valve is set to "SEALING".
8. Press the "MEAT/STEW" button or "MANUAL" mode and set the cooking time to 90 minutes at high pressure.
9. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
10. Shred the beef with two forks and return it to the pot.
11. Stir in the shredded cheese until melted and well combined.
12. Taste and adjust the seasoning as needed.
