Instant Pot Recipes Beef Pot Roast

Ingredient:

* 2 lbs beef pot roast (such as chuck or round)
* 2 tablespoons olive oil
* 1 onion, peeled and sliced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 bay leaf
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 2 carrots, peeled and sliced
* 2 potatoes, peeled and cubed

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Sear the pot roast on all sides until browned, about 2-3 minutes per side. Remove the pot roast from the Instant Pot and set aside.
2. Add the sliced onion to the Instant Pot and cook until caramelized, stirring occasionally, about 5 minutes.
3. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
4. Add the beef broth, red wine (if using), tomato paste, thyme, rosemary, bay leaf, salt, and pepper to the Instant Pot. Stir to combine.
5. Return the pot roast to the Instant Pot and bring the liquid to a boil.
6. Close the lid of the Instant Pot and make sure the valve is set to "Sealing". Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 60 minutes at high pressure.
7. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
8. Remove the pot roast from the Instant Pot and slice against the grain. Serve with the cooking liquid and vegetables.
