Instant Pot Beef Short Rib Recipes
Servings: 4-6 people
Ingredients:
* 2 pounds beef short ribs
* 2 tablespoons olive oil
* 1 large onion, sliced
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 tablespoon tomato paste
* 2 teaspoons dried thyme
* 1 teaspoon paprika
* Salt and pepper, to taste
* 2 bay leaves
* Fresh parsley, chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Add the sliced onion and cook until caramelized, stirring occasionally, for about 5-7 minutes.
3. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
4. Add the beef short ribs, beef broth, red wine (if using), tomato paste, thyme, paprika, salt, and pepper. Stir to combine.
5. Close the lid of the Instant Pot and set the valve to "Sealing".
6. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
7. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
8. Remove the short ribs from the Instant Pot and transfer them to a plate. Strain the cooking liquid and discard the solids.
9. Skim the fat from the surface of the cooking liquid and discard.
10. Return the short ribs to the Instant Pot and add the chopped parsley (if using). Simmer the short ribs in the cooking liquid for an additional 10-15 minutes, or until the meat is tender and falls off the bone.
