Instant Pot Recipes Beef Tacos
Ingredients:
* 2 pounds beef stew meat (such as chuck or round)
* 1 onion, diced
* 2 cloves garlic, minced
* 1 packet of taco seasoning (or homemade blend of chili powder, cumin, paprika, and salt)
* 1 can (14.5 oz) diced tomatoes
* 1 can (15 oz) red kidney beans, drained and rinsed
* 1 tablespoon olive oil
* 1 teaspoon cumin
* Salt and pepper, to taste
* 8-10 taco shells (corn or flour)
* Optional toppings: shredded cheese, diced tomatoes, shredded lettuce, avocado, sour cream, cilantro
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Add the diced onion and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
4. Add the beef stew meat and cook until browned on all sides, about 5-6 minutes.
5. Add the taco seasoning, cumin, salt, and pepper, and stir to combine.
6. Add the canned diced tomatoes and red kidney beans, and stir to combine.
7. Close the Instant Pot lid and make sure the valve is set to "Sealing".
8. Press the "Manual" or "Pressure Cook" button and set the cooking time to 30 minutes at high pressure.
9. When the cooking time is up, allow the pressure to release naturally for 10-15 minutes, then quick-release any remaining pressure.
10. Open the Instant Pot and check the beef for tenderization. If it's still slightly firm, close the lid and cook for an additional 10-15 minutes.
11. Warm the taco shells according to package instructions.
12. Assemble the tacos by slicing the beef into thin strips and placing it into the warmed taco shells. Add your desired toppings and serve immediately.
Cook Time: 30 minutes
Prep Time: 15 minutes
Total Time: 45 minutes
Variations:
* Add some heat by incorporating diced jalapenos or serrano peppers into the recipe.
* Use ground beef instead of stew meat for a different texture.
* Add some smokiness by incorporating chipotle peppers in adobo sauce.
* Use beef broth instead of diced tomatoes for a more robust flavor.
* Experiment with different spices and seasonings to create unique flavor profiles.
* Serve with salsa, guacamole, or sour cream for added creaminess.
