Veggie Beef Soup Recipes Instant Pot
Servings: 6-8 people

Ingredient:
* 1 lb beef stew meat (such as chuck or round)
* 2 medium-sized carrots, peeled and chopped
* 2 medium-sized potatoes, peeled and chopped
* 1 large onion, chopped
* 3 cloves of garlic, minced
* 2 cups of frozen mixed vegetables (such as peas, corn, and green beans)
* 1 cup of beef broth
* 1 cup of water
* 2 tablespoons of tomato paste
* 1 teaspoon of dried thyme
* 1/2 teaspoon of dried rosemary
* Salt and pepper, to taste
* 2 tablespoons of olive oil
* 2 cups of diced tomatoes (optional)
Instruction:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until it's hot.
2. Add the chopped onion and sauté until it's translucent, about 5 minutes.
3. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
4. Add the chopped carrots and potatoes, and cook for 5 minutes, stirring occasionally.
5. Add the beef stew meat and cook until it's browned on all sides, about 5-7 minutes.
6. Add the beef broth, water, tomato paste, thyme, rosemary, salt, and pepper. Stir to combine.
7. Close the lid of the Instant Pot and set the valve to "Sealing".
8. Press the "Meat/Stew" button or "Manual" mode and set the cooking time to 30 minutes at high pressure.
9. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
10. Open the lid and add the frozen mixed vegetables and diced tomatoes (if using). Stir to combine.
11. Close the lid and set the valve to "Sealing" again.
12. Press the "Saute" button again and simmer the soup for 10-15 minutes, or until the vegetables are tender.
Variations:
* To make a vegetarian version, omit the beef and add an additional cup of mixed vegetables, such as bell peppers, zucchini, and mushrooms.
* To make a spicy version, add 1-2 teaspoons of cayenne pepper or red pepper flakes to the soup.
* To make a creamy version, add 1/4 cup of heavy cream or half-and-half to the soup before serving.
