Beef Vegetable Soup Instant Pot Pressure Cooker Recipe

Servings: 6-8

Ingredients:

* 2 pounds beef stew meat (such as chuck or round)
* 2 medium onions, chopped
* 3 cloves garlic, minced
* 3 medium carrots, peeled and sliced
* 2 medium potatoes, peeled and cubed
* 1 large red bell pepper, sliced
* 1 can (14.5 oz) diced tomatoes
* 4 cups beef broth
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 bay leaves
* 2 tablespoons olive oil

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil. Add the chopped onions and cook until they are translucent, about 5 minutes.
2. Add the minced garlic and cook for an additional 1 minute, until fragrant.
3. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes.
4. Add the sliced carrots, cubed potatoes, and sliced red bell pepper. Cook for 2-3 minutes, until the vegetables are slightly tender.
