Beef Chuck Arm Roast Recipes Instant Pot

Servings: 6-8

Ingredients:

* 3-4 pound Beef Chuck Arm Roast
* 2 tablespoons Olive Oil
* 1 onion, sliced
* 3 cloves Garlic, minced
* 1 cup Beef broth
* 1 cup Red wine (optional)
* 2 tablespoons Tomato paste
* 2 tablespoons Worcestershire sauce
* 1 teaspoon Dried thyme
* 1 teaspoon Dried rosemary
* 1 bay leaf
* Salt and pepper, to taste
* 2 potatoes, peeled and cubed (optional)
* 1 cup carrots, peeled and sliced (optional)

Instructions:

1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering.
2. Sear the beef roast on both sides until browned, about 2-3 minutes per side. Remove the roast from the Instant Pot and set aside.
3. Add the sliced onion to the Instant Pot and cook until caramelized, about 5 minutes.
4. Add the minced garlic and cook for an additional minute, until fragrant.
5. Add the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf to the Instant Pot. Stir to combine.
6. Return the beef roast to the Instant Pot and lock the lid.
7. Cook on "Meat/Stew" mode for 90-120 minutes, or until the beef is tender and falls apart easily.
8. If using, add the potatoes and carrots to the Instant Pot during the last 30 minutes of cooking.
9. When the cooking time is complete, allow the pressure to release naturally for 10-15 minutes, then quick-release any remaining pressure.
10. Remove the beef roast from the Instant Pot and let it rest for 10-15 minutes before slicing against the grain.
