Instant Pot Beef Eye of Round Roast Recipe
Servings: 6-8
Ingredients:
* 3-4 pound beef eye of round roast
* 2 tablespoons olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 cup beef broth
* 1 cup red wine (optional)
* 1 teaspoon dried thyme
* 1 teaspoon dried rosemary
* 1 bay leaf
* Salt and pepper, to taste
* 2 carrots, peeled and chopped (optional)
* 2 potatoes, peeled and chopped (optional)
Instructions:
1. Press the "Saute" button on the Instant Pot and heat the olive oil until shimmering. Sear the beef roast on all sides until browned, about 2-3 minutes per side. Remove the roast from the pot and set aside.
2. Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional minute, until fragrant.
3. Add the beef broth, red wine (if using), thyme, rosemary, and bay leaf to the pot. Stir to combine and bring to a simmer.
4. Return the beef roast to the pot, making sure it's mostly submerged in the liquid. If necessary, add a little water to cover the roast.
