This recipe is a simple and delicious way to cook salmon and Brussels sprouts on a single sheet pan for easy cleanup.

Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved (or quartered if large)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 salmon fillets (skin-on or skinless, about 6 ounces each)
  • 2 tablespoons lemon juice (optional)
  • 2 tablespoons chopped fresh herbs (optional, such as parsley, dill, or chives)

Cooking Guide:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Toss the Brussels sprouts with olive oil, salt, and pepper in a large bowl. Spread them out in a single layer on the prepared baking sheet.
  3. Place the salmon fillets on top of the Brussels sprouts, leaving some space between them. Season the salmon with salt and pepper.
  4. If using, drizzle the salmon with lemon juice.
