Recipe: Low Sugar Banana Bread with Greek Yogurt
Ingredients:
* 3 large ripe bananas, mashed
* 1/2 cup (100g) granulated sugar
* 1/4 cup (60g) unsalted butter, softened
* 1 large egg
* 1/2 cup (120ml) plain Greek yogurt
* 1 teaspoon vanilla extract
* 1 1/2 cups (180g) all-purpose flour
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 1/4 cup (30g) chopped walnuts (optional)
* 1 tablespoon honey or sugar substitute (optional)
Instructions:
1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a large mixing bowl, combine the mashed bananas, granulated sugar, and unsalted butter. Mix until well combined.
3. Beat in the large egg and vanilla extract until smooth.
4. Add the Greek yogurt and mix until fully incorporated.
