Easy Shrimp and Garlicky Broccoli Skillet

This recipe is a perfect weeknight meal – packed with flavor, quick to prepare, and requiring only one pan for easy cleanup!

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound medium shrimp, peeled and deveined (tails on or off, your preference)
  • 4 cups broccoli florets
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tablespoons butter
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Cooking Guide:

  1. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the pan and set aside on a plate.
  2. Add the broccoli florets to the hot pan and cook for 3-4 minutes, stirring occasionally, until crisp-tender.
  3. Add the garlic and red pepper flakes (if using) to the pan and cook for 30 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic.
  4. Pour in the white wine (or broth) and scrape up any browned bits from the bottom of the pan. Bring to a simmer and cook for 1 minute.
  5. Stir in the butter and cook until melted. Season with salt and pepper to taste.
  6. Return the cooked shrimp to the pan along with the chopped parsley. Toss to coat everything in the garlicky sauce.
  7. Serve immediately over rice or your favorite whole grains.

  • For extra garlicky flavor, add an additional clove or two of garlic.
