This recipe offers a delicious and healthy twist on classic lasagna, using spaghetti squash instead of noodles.

Ingredients:

  • 1 medium spaghetti squash (3-4 pounds)
  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 1 pound ground beef (or Italian sausage)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried Italian seasoning
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg

Cooking Guide:

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds. Drizzle flesh with olive oil, sprinkle with oregano, garlic powder, and black pepper. Place squash cut-side down on a baking sheet and bake for 40-45 minutes, or until tender.
  3. While squash bakes, brown ground beef in a large skillet over medium heat. Drain any excess fat.
  4. Stir crushed tomatoes, tomato sauce, tomato paste, and Italian seasoning into the browned beef. Bring to a simmer and cook for 10 minutes.
  5. In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, and egg. Mix well.
  6. Once spaghetti squash is cooked, let cool slightly. Use a fork to shred the flesh into spaghetti-like strands.
  7. Reduce oven temperature to 375°F (190°C). Grease a 9×13 inch baking dish.
  8. Layer half of the spaghetti squash in the bottom of the prepared dish. Top with half of the meat sauce and half of the cheese mixture. Repeat layers with remaining squash, sauce, and cheese.
  9. Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly.

Tips:

  • For a vegetarian option, substitute crumbled tofu or lentils for the ground beef. Saute the tofu or lentils with your favorite Italian seasoning before adding to the sauce.
  • If your sauce seems too thin, simmer for an additional 10-15 minutes before assembling the casserole.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
  • To add a touch of sweetness, spoon ½ cup of your favorite marinara sauce on top of the casserole before baking.
