Instant Pot Bruschetta Chicken Pasta
This flavorful pasta dish is packed with juicy chicken, fresh bruschetta topping, and all cooked in your handy Instant Pot for a quick and easy weeknight meal.
Ingredients:
- For the Chicken and Pasta:
- 1 tablespoon olive oil
- 1-1.5 pounds boneless, skinless chicken breasts, diced into 1-inch pieces
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 cups chicken broth (low-sodium preferred)
- 16 ounces dry pasta (such as rotini, penne, or cellentani)
- 1 cup grated Parmesan cheese
- For the Bruschetta Topping:
- 5-6 Roma tomatoes, diced
- 1/2 cup fresh basil, thinly sliced
- 1/2 cup red onion, finely diced
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon lemon juice
- Salt and pepper to taste
Cooking Guide:
- Make the Bruschetta Topping: In a bowl, combine diced tomatoes, red onion, fresh basil, olive oil, minced garlic, lemon juice, salt, and pepper. Stir well and set aside.
- Cook the Chicken and Pasta: Heat olive oil in your Instant Pot using the “Sauté” function. Add the diced chicken and cook until lightly browned on all sides, about 5 minutes. Stir in the dried parsley, oregano, basil, garlic powder, black pepper, and salt.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the pasta and stir to combine.
- Cancel the “Sauté” function and close the lid of the Instant Pot. Ensure the pressure valve is set to “Sealing.” Cook on high pressure for 5 minutes.
- Once cooking is complete, let the pressure release naturally for 5 minutes, then perform a quick pressure release by carefully turning the pressure valve to “Venting.“
- Open the lid and stir in the grated Parmesan cheese. Add the prepared bruschetta topping and gently fold it into the pasta and chicken mixture.
- Serve immediately and enjoy!

- For a spicier kick, add a pinch of red pepper flakes to the chicken while it’s browning.
- If you don’t have fresh herbs, you can substitute 1 teaspoon of Italian seasoning for the dried parsley, oregano, and basil.
