This flavorful pasta dish is packed with juicy chicken, fresh bruschetta topping, and all cooked in your handy Instant Pot for a quick and easy weeknight meal.

Ingredients:

  • For the Chicken and Pasta:
    • 1 tablespoon olive oil
    • 1-1.5 pounds boneless, skinless chicken breasts, diced into 1-inch pieces
    • 1 teaspoon dried parsley
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon salt
    • 2 cups chicken broth (low-sodium preferred)
    • 16 ounces dry pasta (such as rotini, penne, or cellentani)
    • 1 cup grated Parmesan cheese
  • For the Bruschetta Topping:
    • 5-6 Roma tomatoes, diced
    • 1/2 cup fresh basil, thinly sliced
    • 1/2 cup red onion, finely diced
    • 2 tablespoons olive oil
    • 1 tablespoon minced garlic
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

Cooking Guide:

  1. Make the Bruschetta Topping: In a bowl, combine diced tomatoes, red onion, fresh basil, olive oil, minced garlic, lemon juice, salt, and pepper. Stir well and set aside.
  2. Cook the Chicken and Pasta: Heat olive oil in your Instant Pot using the “Sauté” function. Add the diced chicken and cook until lightly browned on all sides, about 5 minutes. Stir in the dried parsley, oregano, basil, garlic powder, black pepper, and salt.
  3. Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the pasta and stir to combine.
  4. Cancel the “Sauté” function and close the lid of the Instant Pot. Ensure the pressure valve is set to “Sealing.” Cook on high pressure for 5 minutes.
  5. Once cooking is complete, let the pressure release naturally for 5 minutes, then perform a quick pressure release by carefully turning the pressure valve to “Venting.
  6. Open the lid and stir in the grated Parmesan cheese. Add the prepared bruschetta topping and gently fold it into the pasta and chicken mixture.
  7. Serve immediately and enjoy!

  • For a spicier kick, add a pinch of red pepper flakes to the chicken while it’s browning.
  • If you don’t have fresh herbs, you can substitute 1 teaspoon of Italian seasoning for the dried parsley, oregano, and basil.
