Sourdough Banana Raisin Bread Recipe
Ingredients:
* 1 cup sourdough starter (active and bubbly)
* 1 1/2 cups all-purpose flour
* 1/2 cup whole wheat flour
* 1/2 cup granulated sugar
* 1/4 cup unsalted butter, melted
* 2 large eggs
* 2 ripe bananas, mashed
* 1 cup raisins
* 1 teaspoon active dry yeast
* 1 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 cup chopped walnuts (optional)
Instructions:
1. In a large mixing bowl, combine sourdough starter, all-purpose flour, whole wheat flour, sugar, and melted butter. Mix until a shaggy dough forms.
2. In a separate bowl, whisk together eggs, mashed bananas, and raisins. Add this mixture to the dry ingredients and mix until a sticky dough forms.
3. Cover the dough with plastic wrap or a damp towel and let it rest for 20-30 minutes, known as the autolyse phase.
4. Add yeast, salt, cinnamon, and nutmeg to the dough and mix until well combined.
5. Knead the dough on a floured surface for 10-12 minutes, until it becomes smooth and elastic. You can also use a stand mixer with a dough hook attachment.
6. Place the dough in a greased bowl, cover it with plastic wrap or a damp towel, and let it rise in a warm, draft-free place for 1-2 hours, or until it has doubled in size.
7. Preheat the oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper.
8. Gently deflate the dough and shape it into a round or oblong loaf. Place the dough in the prepared loaf pan.
9. If using walnuts, sprinkle them on top of the dough.
10. Bake the bread for 35-40 minutes, or until it's golden brown and sounds hollow when tapped on the bottom.
11. Remove the bread from the oven and let it cool on a wire rack for at least 10-15 minutes before slicing.
